Chardonnay Bio

Cuvée 100% chardonnay, unique expression revealing a successful association between the grape variety and this terroir of Château Saint Louis. The harmony arises from a balance between an engaging nose that is highly expressive and a pleasantly round mouth. The grapes underwent pressing and then debourbage at low temperature. The maceration takes place on fine spreads. The vinification lasts around three weeks in a thermo-regulated manner and ends with malo-lactic fermentation.

30ha in Organic Agriculture Age of vines: 35 years, on average.

Terroir

Boulbène and sandy loam on the surface and clay at depth.

Varietals

100% Chardonnay

Vinification

Pressing with pneumatic press, settling at 6°C after 24 hours. Maceration on fine lees for 4 days. Low-temperature vinification (below 18°C) controlled by a 6°C cold-water exchanger. 80% of the blend was vinified and aged for 4 months in French oak barrels. The remainder was vinified and aged in concrete tanks.

Tasting

Pleasant, engaging nose evoking white-fleshed fruit, with pear, but also notes of quince and fresh hazelnut Racy finish blending notes of hazelnut and spice with good persistence.

Wine and food pairings

Crépinettes of lamb chops with Chavignol crottin, Monkfish skewers with smoked bacon.
