The « Pinot Saint Georges », also called Négrette, is the varietal of the Fronton area, and also the main varietal of Saint Louis
The Negrette is our principal varietal. All our red wine contain at least 70% of Negrette. The Cabernet Franc is our second most used varietal, and finally we also use a touch a Syrah
FOR OUR WHITE WINES
At Château Saint Louis, we were the first ones in the department to grow some Chardonnay. This famous varietal from Burgundy has greatly adapted to the domain’s microclimate.With the Chardonnay, we produce a remarkable white wine, as well as a sparkling wine, called “Prêt en Bulles”, which amaze all our customers.
All our wines are produced, matured, and bottled at the Château.
The winemaking is realized into enameled thermo regulated traditional vats.
The thermo regulation allows the winemaking to happen with ideal temperatures to successfully extract colors and tannins from the grapes in order to improve aroma and taste of our wines.
We do not use any allergen product during winemaking. The grapes are never enriched with any sugar or must.
Ali MAHMOUDI has an original and unique way to create his wines; he could be compared to an artist in front of his painting.
We use 140 oak barrels for the maturation of the wines.
Maturing of our red wines lasts for 12 months in oak barrels..
Maturing of the Chardonnay is also partially done in oak barrels.
